Fresh Chopped Spinach & Cheese Quiche
Got any leftovers from the holidays? What about creating some quiches that will satisfy everyone’s taste buds. We had some fresh spinach and sweet ham left over and decided to make some quiches for a brunch.
Serving Size 4 one serving dishes
1/2 cup of chopped fresh spinach (washed and dried thoroughly)
1 pint of heavy whipping cream (carton)
1 cup of shredded cheese (optional-I recommend three cheese blend)
2 roll out pie crusts (cut to size of dish)
Salt and Pepper to taste
***Can add in a meat as well. We made one with sweet ham and spinach. Image shown below.
Directions for Spinach Quiche
Preheat oven to 350 degrees.
Cut pie shells to size of dish being used. I recommend turning the dish upside down and then using a pizza cutter to cut to shape.
Spray the dishes with your choice of non sticking oils and then place the cut pie crusts inside.
Begin by whipping the four eggs in a bowl.
Then add in the heavy whipping cream and whisk.
Add in cheese to the mixture and whisk.
Add in freshly chopped spinach to mixture and whisk.
Pour mixtures evenly into the dishes you are using.
**If using two sizes as we did, judge accordingly when pouring into containers.
Liquid should be quarter inch below the lip of dish due to rising of mixture.
If you choose to add in a meat such as sweet ham, you will want to add this in before pouring mixture into dishes. We recommend chopping the meats into bite size pieces.
Bake at 350 for 30 to 40 minutes (ovens vary).
Mixture should be golden brown on the top. Check by inserting a toothpick into center, Should come out clean if done.
