Fresh Chopped Spinach & Cheese Quiche

Got any leftovers from the holidays?  What about creating some quiches that will satisfy everyone’s taste buds.  We had some fresh spinach and sweet ham left over and decided to make some quiches for a brunch.

Serving Size 4 one serving dishes


 1/2 cup of chopped fresh spinach (washed and dried thoroughly)

4 eggs

1 pint of heavy whipping cream (carton)

1 cup of shredded cheese (optional-I recommend three cheese blend)

2 roll out pie crusts (cut to size of dish)

Salt and Pepper to taste

***Can add in a meat as well.  We made one with sweet ham and spinach.  Image shown below.

Directions for Spinach Quiche

Preheat oven to 350 degrees.

Cut pie shells to size of dish being used.  I recommend turning the dish upside down and then using a pizza cutter to cut to shape.

Spray the dishes with your choice of non sticking oils and then place the cut pie crusts inside.

Begin by whipping the four eggs in a bowl.

Then add in the heavy whipping cream and whisk.

Add in cheese to the mixture and whisk.

Add in freshly chopped spinach to mixture and whisk.

Pour mixtures evenly into the dishes you are using.

**If using two sizes as we did, judge accordingly when pouring into containers.

Liquid should be quarter inch below the lip of dish due to rising of mixture.


If you choose to add in a meat such as sweet ham, you will want to add this in before pouring mixture into dishes.  We recommend chopping the meats into bite size pieces.

Bake at 350 for 30 to 40 minutes (ovens vary).

Mixture should be golden brown on the top.  Check by inserting a toothpick into center,  Should come out clean if done.

Georgia’s State Parks Celebrate New Year’s Day with “First Day Hikes”


All across the country, park rangers are inviting Americans to start the New Year with an energizing First Day Hike.  In Georgia’s State Parks and Historic Sites, dozens of guided treks will encourage friends and families to connect with nature and each other. First Day Hikes are part of a nationwide initiative from America’s State Parks to get people outdoors, with more than 400 hikes scheduled in all 50 states. According to Georgia State Park officials, winter is a particularly scenic time for enjoying trails because the open canopy means hikers can see farther through the woods.

“Without leaves on the trees, you can appreciate the unusual shapes of branches,” said Georgia State Parks Director Becky Kelley.  “You’ll notice small waterfalls, rock outcrops and wildlife that might otherwise be hidden in the forest.”
